lunch today was an ordered-in chello kebab platter (an indianized version of chelow kabab) from our favourite restaurant, peter cat.
you might be wondering why i am eating so much meat suddenly? well i got my blood tested for the regular. fasting glucose was 92 (a record for the last one year) and cholesterol was rock bottom. triglycerides still a bit high but that's 'cos of alcohol. baaki sab dekha jayga. i've also lost 5 kgs without exercise after realizing that i had i put myself to a jan 31st deadline. i think i'll extend the deadline -- this seems to work for me.

give us a value both HDL and LDL
You have launched a high protein diet for yourself ..you will lose the weight and rapidly at first
however can't do this on a long term basis for fear of overload on liver and therefore kidneys as well

no, i have not launched a high protein diet. it was one of those rare occasions when i ate meat 3 days on a trot. i'm not much of a meat eater. it's back to grass for some time now.

oh, missed this. yes, i know. i think it is an aperture and shutter speed problem. there is a bit of a lighting issue here too (incandescent light vs natural -- i don't use flash). even i am concerned and am researching for a fix to this. but don't worry, photos will improve for i'll find a fix fast.

wow, bhaiya ! those are perfect boiled eggs. no dark ring round the corner of the yolk, and they are quite centered. and nice smooth finish on the uncut ones- what is your secret recipe? its not all that easy to consistently cook boiled eggs that neat.

lunch today (a repeat of last night's dinner) was matar kachori (aata kachoris stuffed with peas) and alu sabzi. blabberwock you are right (from a chat discussion), those black things in the alu sabzi are cumin seeds (and also mustard seeds).

had panchmel dal for lunch today with potato sabzi. panchmel dal = mung + masoor + chana + urad. alu sabzi = ginger, garlic, green chillies, kasuri methi (dried fenugreek) and a dash of chilli sauce; no turmeric.
had chicken curry a few days ago. made with honest-to-goodness whole spices only. (i've carefully hidden the potatoes in the image below for propa's viewing pleasure. bonus points to anyone who can spot one.)

when you see moire fringes (northeast corner of the picture) on your food, that's a good sign that atherosclerosis isn't far away!

true. once in a while it is ok. though, with indian meat curries (particularly mutton and fish though not so much with chicken), oil in the curry is inevitable as the meat releases its own oil. you will notice these fringes in my mutton dish above too and it is really a stew!
on another note, my older has been cooking and eating this for the last few days. he likes to cook. half-boiled and then stir-fried vegetables (baby corn, baby potatoes, mushrooms, carrots, beans) with herbs.
on yet another note, would you rather prefer haji noora's bade ki nihari OR al jawahar's mutton nihari OR luknavi murg musallam? no fringe element there, eh?

Just tried making a sandwich recently with Avocado. It came out great. This has become our regular health snack.
2 Slices of bread. Spread/mash the avocado on one slice bread. Put few slices of Apple. If it is organic it tastes really good. Add more slices of persian cucumber. Cover it with another slice and put it in small toaster oven for few minutes till the top/bottom breads become crisply/brown. I like the warm sandwich. It tastes good and healthy(Heal'dh'y for some)

I was feeling a bit low on triglycerides so I loaded up over the weekend:
Friday: Fried bombil, hyderabadi pomfret and prawns achari with roti
Saturday: Tandoori chicken, Chicken biryani and dabba gosht with roti
Today: Leftover biryani, seekh kebab and veggie stir-fry, mushroom fry; washed down with lawnmower beer
Arteries feeling nice and hard this evening...

nice md! very fascinating reading about dabba gosht. one recipe has bread and noodles in it! never heard of this item before. this item belongs in which region's cuisine? i think i should get this made -- kids will love it.

I'd never heard of it before too. But most Muslim restaurants in Mumbai offer it. Looking at the weird ingredients, I suspect it was one of those leftovers-put-together discoveries, like chop-suey. Unlike other Mughlai items, this one very bland, so the mutton flavors come out strong.

Usually it's the parsis who do this kind of crossover cooking, but I've never seen dabba mutton in a parsi restaurant so I guess this one is a purely Muslim restaurant specialty.

yaa. i just spoke to my cousin in mumbai. he loves this dish. he says it is a bohri muslim specialty and carries noodles -- dish too be eaten with rotis. he thinks persian darbar serves best dabba gosht. btw, i have his permission for scandalizing him here by posting about him (whatever that means!). yes, it is like a mutton casserole but whole-ly different with indian spices.

omg chams. actually i had almost mentioned that i planned to cook paya soon (https://www.youtube.com/watch?v=wgL0kej7BgU) in my above reply to md but decided to delete it at the last moment to not digress from the topic at hand. i got intrigued by paya last week and was surprised to find that it is a part of hyderabadi cuisine and that it is made of offals (i had thought leg pieces are used and that it was mughlai).

had dal makhani today. the tadka was in refined oil. onle one tablespoon of cream was used (it gives it that ochre colour). a little cream was added on top for the restaurant, buffet-style effect. a very small stick of low-fat butter was added before the vessel was removed from the stove to make it "makhani" dal.

Wow. Beautiful. I personally like dal makhni but from a positioning point of view, it is all messed up. It neither has the simplicity of a plain dal tadka nor the sophistication of an all-out mughlai curry. It aspires for the latter, with dollops of butter and cream, but all that cholesterol is only lipstick on a pig. Ultimately, dal makhni's ambitions are let down by its basic ingredient which is, alas, the humble black lentil.
When I order a la carte in a mughlai kind of place, I'm biased towards kebabs and grilled items followed by a proper greasy gravy-based item with roti. That leaves no space for a dal makhni which I have with rice wonly.
And then there are those lavish buffets where dal makhni is just one of many items, struggling to compete for my attention and the limited real estate that is my tummy. And much as one would like to support an ambitious dal, the rogan joshes and gosht rarahs do get precedence. If one is clogging up those arteries with butter and cream, might as well go the whole hog and throw in some goats too.

interesting that you mention rice and dal makhani. i realized that i always eat dal makhani with rice in restaurants -- i reserve the rotis for the meat curries. but this is among the few dals that i like to eat with either rice or rotis.

Yes. I just tried adding thin slices of baby carrots and it tastes good too. The more you take raw foods(fruits/vegetables) the better....
