well last week I had some kind of Japanese roll with shitake mushrooms, shredded cabbage grated ginger and shredded carrot also.

I recc you eat mushrooms only inside fancy hotels and restaurants. in case it's poisonous and you almost die you know exactly who to sue.

use the standard recipe (spices etc.) for making a "dry" sabzi (e.g. alu-gobhi) and improvise ....  instead of alu and gobhi, use peas and mushrooms.

Stir fry onion, ginger slices, tomato, mirch powder, very little haldi,salt and dhania powder. When the mixture starts to turn to a paste, add sliced mushrooms and mix. Cover with lid, reduce flame to very low and let simmer for 20-25 min.
