How is this environmentally friendly? How much agricultural land and water does a banana plant consume? What's wrong with a plate?

The banana leaves are a byproduct in this case, from a tree grown for fruits. These leaves not only are a bio-degradable material unlike plates, they also make a good fodder for the cattle and also the manure for soil (without passing through the cattle or even after getting consumed by the cattle). Their use in the place of plates is just another plus, thus saving money for the plates. Moreover, they don't even have to be cleaned after eating in them to be fed to the cattle or thrown in the soil.
