Ya, downtown is probably just 20 mins away. But do you really want to step out to see more malls and glitzy skyscrapers? I would any day prefer a hearty breakfast, shower and nap/read followed by beer and a good lunch before boarding.

wow you get to take a month long india vacation... lucky. the last time i did that was 10-11 years ago.
5 hours hmm. so many variables.
will you need to get a visa?
Considering all the lines coming in and going out may cost 2-3 hours total, you have about 2-3 hours maximum to play with. worth it?

It's a crowded airport. Find a cozy nook, preferably close to your gate and stay put there.
Or like Merlot suggested, have a leisurely lunch/dinner n get on with your journey. Don't go out n come back on a stopwatch.

BTW, there is even a mosque inside the airport - Terminal A, if I am right. He can pray and gain Dubaiallah's blessings.
