spinach
...have bunches of it. Sent my husband to buy kale. He comes back with spinach, that too so much of it! I am bored of making it with daal and also keerai masiyal. I do not have fresh paneer. Any spinach recipes?

ganpath's spinach sabzi (that i love):
wash spinach, chop into small pieces.
heat spinach with salt and turmeric in a pan for 2 minutes (steaming for softness).
heat oil in a skillet, add cumin seeds.
once cumin seeds splutter, add chopped onions, chopped ginger and chopped garlic.
when onions turn golden brown, add chopped green chillies.
add spinach to it.
after spinach is cooked add diced tomatoes.
after tomatoes are cooked, add garam masala.
optional: you can add diced potatoes or corn kernels or baby corn to it. i avoid this option.
eat with rotis.
edit. mosquito is suggesting almost the same recipe.

here' s another easy spinach recipe
1. bring water to a boil in a pan
2. add washed spinach to it
3. let it boil for a min
4. drain all the hot water and soak spinach in ice cold water till the spinach is not hot anymore ( or you can run cold water thru it )
4.1. squeeze all the extra water from spinach and store it in airtight container in freezer for future use.
5. add an inch of ginger + 2 green chilies along with spinach and grind it.
6. heat oil in a pan + cumin seeds + heeng + chopped tomato + turmeric. let it cook. + salt (only for the tomatoes)
7. add ground spinach from the mixer and add little water + peas+ salt
8. let it come to a boil. do not cover with a lid.
serve with roti or rice

I sometimes add besan to a spinach or methi based sabzi. Specially if I don't have too much of the other taam jhaam in there. Can't give recipe of anything coz I improvise almost every time I cook. So use your own imagination

OMG, i have everything mentioned above, even the potatoes. yes, mosquito is.
VB, i am not good at improvising. i need a tested recipe. i cook better when i am organized with ingredients and stuff before i start cooking.

spaghetti with spinach, asparagus, and tomatoes. a bit of olive oil and roasted garlic added to the mix with red pepper flakes and shavings of parmigiano reggiano cheese. heaven.

Spinach with baby Lima beans. You can use up a LOT of spinach with this. I can eat this all by itself, as an appetizer, as a snack or whatever. It really isn't that sort of finger food but it tastes good. It won't have any thing left in it, nutrient wise, but I guess that's not the goal right now.
Heat oil- a tablespoon (or two) if you feel like it, in a large skillet. Do the usual tadka/talimpu/whatever you call it, with mustard seeds, cumin seeds, urad dal/ red chillies. Add a bag of frozen baby Lima beans. One small bag for 1-2 bunches of spinach. Sauté until done with nice brown spots on them. Add spinach. Wait until it wilts, then add salt and red chilli powder. Cook uncovered until it is very dry, and starts sticking to the pan. Drizzle more oil, cook for another 2-5 mins.
Beans should be on the crunchier side, not too soft.

Have made spinach with almost e'thing. w/paneer, w/alu, w/peas, w/carrot, w/corn, w/lima beans, w/besan, w/chana (chhole), w/chicken, w/pasta, in soups, in daal, some permutation-combinations of the above, on its own, as stuffed paratha, and also mixed w/poori doughs, sometimes mesh up one of the above sabzis to make poori/paratha.
Kids still hate it in all its forms, except the invisible paratha/poori version, or if it is not dominant e.g. in chana/chicken/pasta. They do eat it though. Surprisingly, they deal better with methi. In case of methi, I go, 'This is good for controlling cholesterol and sugar, and the older one goes, 'Mommy, I am FOURTEEN!!'

argh.. when i looked for the pictures of keerai masiyal on google before recommending the MH recipe, i saw some pics that looked a lot like paneer saag / palak paneer minus paneer. never mind then. her socks are intact.

I know it can be hard..and requires a lot of self-control. I can cut back on any food, including non-veg..but, will admit..I like non-veg a lot and need at least a little taste of it (!) and can't completely abstain! There is also no real reason for me to abstain..but, who knows? It may change in the future.

ya i know maria. the rest of the family (wife and 2 sons) cannot do without meat at least twice a week but i can. so everyone -- even those in the same family -- is different. i stopped meat for health reasons (to reduce weight; to stick to a diet plan) and then i found that i no longer enjoyed meat. i lost 5 kgs in the process though and have managed to pull my blood sugar from pre-diabetes level down to normal level. but items (i) and (ii) i will definitely savour again. *Let me ask you..are you "so sure" that you will never change your mind about anything- try something different..ever?

3) i will try anything at least once.
i chose 3 and found that the results showed that 3 was the choice of an overwhelming majority.
