This was Mrs. Shakuntala Seetharaman's entry in a recent recipe contest run by Washington Post.
It's completely vegetarian and received a lot of praise by the judges. However, she didn't win a prize because she exceeded the ingredient limit. With true Indian ingenuity she joined olive oil and tofu (2 ingredients) and listed them as one (baked tofu) ingredient to stay withing the limit. But the judges saw through it. But still they loved her recipe and it appeared in print. Sounds good to me too. Here is the link. Try and enjoy.
