Upma is to upmai like dosa is to dosai, and therein lies a bad upama.

it has always been upma. see all these dishes from TN to other places, where the -ai got terminated to an -a in the other languages. however tamilians have always called upma, upma. so there was no reason for further modification.

Does it also work the other way around? Do dishes that came to Tamilland get an -ai suffix?

I think the right name is uppuma (salt flour). In Karnataka it is called uppittu meaning the same thing.
Upma is a truncated version of the real name.
