Ya this is what I thought too. I have added eggs in paneer bhurji this way a couple of times, either to increase the volume of the bhurji, or if both are nearing expiry.

In the above palak recipe, u substitute paneer with egg whites. Healthy option.

lol, didn't make it. First, someone stopped me at work, and then bff called just as I was getting home. Would have been hard to chop the kaddu while talking, so made matar-kadhi and rice instead.
