chhole

So like, XH's cousins and all are coming tonight. He had said he will grill stuff, but it's raining and all. So he wakes up (yeah at 2:00 pm, told ya he is a teenager), and says (translating from hindi to english):

XH: you make chhole really good, you know that right?

me: not really, i don't.

XH: yes yes. you do. And rajma too.

me: nope. you used to say it's always bitter when i make it.

XH: that was earlier, it's been better in last year or so.

me: well, i am sure if you make it, it will be much better.

XH: we don't have canned chhole. woh chane bhigona wagahra (soaking chana, etc) i don't know.

me: yeah ya to unhe bhiga ke rakho ya pressure cook karo. (either soak them or pressure cook).

XH: how do you do it?

me: bhigana (soaking) is better. But if I am out of time, I just pressure cook it twice. Once before, and once with masala.

XH: how long do you pressure cook it?

me: 7-8 minutes each time, idk. when i can smell it.

XH: Can you do it now? atleast chana bhigo ke rakh de for now.. (atleast soak the chana). I don't know how much to take and all.

me: tu bhiga de, 1 cup (you keep them for soaking), bana main doongi (I will cook). And btw, it's bhigana, not bhigona.

So then we went back and forth about bhigana versus bhigona. Living with me for 16 years and he wouldn't learn. Stupid marathis and some words they kill. How is it bhigona? Anyone?

Karona, dekhona, padhona, aaona, jaona....similarly, bhigona. Makes sense.Why should it be bhigana?

bhigana and bhiga kar/ke rakhna are words of their own. just like karna, dekhna, padhna, and so on.

we non-hindi speakers say karona, etc, not karna. karona=do it for me, no. similary, bhigona/bhigaona=saok it for me, pls. the 'ona' is attached as a request. it's a more polite way of pleading/asking. kar, dekh, etc seem like commands, pretty rude.

PS: As a non-hindi speaker, i support xh.

Oh that way. If you wanna say it politely you say bhigado or bighado na or bhigao na.

See you yourself said bhigao, not bhigo-o. Means bhiga is correct. Not bhigo.

Edit: speaking politely is more UP Bihari thing and Muslim thing. Marathis use the least polite terms. Addressing someone as aap is too too rare for them.

i think the common ground for you both is bhigao na. satisfies both bhigana and bhigona.

Whatever little bit Hindi I learnt was from my friends from UP/Doordarshan movies and my sis-in-law (delhiite). When I went to Bombay, I got surprised by the 'lafda mangtha hai kya/kya mangtha' (Nana Patekar style?) type of language..

xh and i call each other as tu. that's our local marathi influenced culture, and we've known each other since 9th grade. xb used to call me tu too, while i addressed him as tum. e'one else in xh's family addresses me as tum, coz i am hindi.

xh decided he will make chicken tacos. works for me. kids are happy.

Chhole "Bhigona" vs. "Bhigana" ?

Of course, it is Bhigona.

It appears counter-intuitive bcs bhigona is also a noun for an utensil.

Bhigana is to "make wet", like clothers (not necessarily soak underwater, manually, and not by choice like rains).

Bhigona is a "manual" choice, to "soak".

For e.g. read these 2 sentences, a couple of times, and tell me the difference:

1. Kapde Bhigaa do (make wet, any means)
2. Kapde Bhigo do (underwater)

Now as to your and the forum's dilemma on the tu/tum usage, I would suggest that we wait for the expert duo kv and tanjai nullandsilly. They should be here presently.

P.S. chhole were not made. chicken taco were made instead. They turned out well. All I did for that was to chop veggies. Actually, I did try to avoid that as much as possible, by appearing to look busy. kidding, I vacuumed and mopped first and then later appeared to look busy. But when I saw XH chopping last half of a tomato, I went and asked if he needed any help. I was hoping he will say 'no I am almost done'. But he quickly dropped that tomato-half and asked me to chop it. When I was done, he asked me to chop an onion as well. Then he cribbed why I was making a face when he actually took my offer. I mean, what has the world come to. No formality left.

I am glad you started this thread, from health and safety considerations.

Always soak ("bhigo", not "bhiga") the dry channa / chhole / gram (and beans too) for 24 hours (changing the water at least once) to get rid of the toxins even if you are using the pressure cooker. Without prior soaking in water, the toxins in chhole and beans not only will make the cooked dish have a slightly bitter taste but also can give headache etc. to the eater. This of course does not apply if you are using canned (pre-soaked) chhole and beans.
