Yesterday in lunch they gave complimentary masala dosa. It had garlic in it, ugh. I would rather have paneer.
arrible. garlic chutney, otoh, might go well as an accompaniment.
the other day a punjabi aunty, on the net, asked me for the hindi name of kokum. i said - why you want do know? she said - i want to make solkadhi and the recipe mentions kokum; what's hindi for it? i laughed. i said kokum is kokum but you might not get it in chandigarh so use tamarind instead.

tingu wrote:had the rural bengal (and assam, bihar, orissa,chattisgarh -- not to mention bangladesh) staple meal for lunch: panta bhaat with fried rui, alu posto and green chillies and onions.
panta bhaat - rice fermented overnight; tastes slightly sweet and sour with salt and served cold;
alu posto - potatoes cooked with poppy seeds;
fried rui - rohu fish fried in mustard oil.
verdict - divine! the best accompaniment to panta bhaat is neither fried fish nor alu posto. the best accompaniment is raw onions!
wtf...is that watery rice? looks horrible, sorry to say. only things remotely appetizing are the chilis and red onion

We have something similar to the rice 'Phanim Bhaath' which means 'water soaked rice'. The water is important and you should not drain it. It has all the 'good bacterias' and it is a great dish when mixed with yogurt and deep fried 'yogurt soaked and dried chillies'. Any stomach related issues can be cured if you eat (for a while for brkfast) this rice(mixed with yougurt) with finely chopped (small red) onions. One of my old uncles has been having this for brkfast so many years and he has no health issues. And I have read about this in a very old yoga/spiritual book too.

Nutritional value of soaked rice is given here. I do not remember removing the water but press the rice along with water so that it get dissolved/mixed properly with yogurt/water.

Is that cooked at home?
Whoa. Impressive, if it is indeed from home, which I find hard to believe :-)
You should post more pix of your cooking.
Best wishes,
TS.

thanks ts. :-) yes, it was home cooked. you haven't eaten prawns? it is not like chicken. it readily absorbs the flavours of the masala but has it's own distinctive taste. think of roasted crabs with butter -- lovely. the heads of these jumbo prawns are succulent and very juicy and tasty.

i made some thing that turned out real nice:
I first made a popu: EVOO plus dry while lentils, mustard seeds, cumin seeds
Then I added finely chopped tomatoes and white onions and green pepper (Spanish) the size of half my pinkie.
To this I added shredded carrots - 2 handfuls - that they sell in the grocery store
In the past I've mentioned spinach and kale bites - I added two of those (the white frosting on them is grated coconut)
After the above had gotten roasted I added 2 frozen garlic cubes and frozen ginger
I let everything roast nicely without losing its natural color and then I added 4 whole eggs from vegetarian fed cage-free chickens. I drizzled some salt over everything.
It came out really nice.
I ate it just now with a big wedge of avocado. And I'm having 2 truffles for dessert: a vanilla brulee and raspberry truffle and almond nougat also.

Re: What are you cooking / having cooked / eating today? [2 of 2]
The reason I added ginger and garlic towards the end is to prevent them from getting overcooked cuz then they lose their anti-inflammatory and anti-carcinogenic values. My sis said that from now I should eat a clove of raw garlic for good health. In addition I could have added turmeric also to the above dish but I wasn't sure about when I'm supposed to add it. YOu know turmeric is a very powerful anticarcinogenic agent. However I have been drinking water with a pinch of turmeric in every cup so I think I should be okay. of course when I was younger I was getting tons of the good stuff in my chaaru.

LOL, LOL, LOL!
i think the best accompaniment to curd rice is curd chillis and... more curd rice!
i added a bit of milk yesterday to my curd rice (thanks GK) and that went a long way to cut the excess sourness! and then i added red chilli pickle (in the pic. to the extreme left) to make it sour! it takes a lot to satisfy the heart!
