PP, the very fact that the company 'Nizami Foods' claims inspiration from the foods cooked in the Nizam's kitchens and the fact that the founder of this company is from Hyderabad means that your attempt to coin the term 'Nizami Food' to represent starvation diet has ended up leaving egg on your face. After the death of Aurangzeb, Asaf Jah I who was initially appointed
as governor (Nizam-ul-Mulk) of Hyderabad declared his independence from
the rulers in Delhi. The seven Nizams of the Asaf Jahi Dynasty restored
Hyderabad’s lost glory and the city flourished once again. They built
huge reservoirs like Nizam Sagar, Tungabadra, Osman Sagar and Himayat
Sagar that gave the city its eponym, The City of Lakes.
The Nizams were autocratic but benevolent at the same time. They were
also shrewd rulers who successfully retained power during the period
when the British and French were vying for control over India. It was
during this time that the twin city of Secunderabad was formed, first as
a military base for the French and later for the British troops.
The seventh Nizam, Mir Osaman Ali Khan transformed a bankrupt State
into the wealthiest princely State in the sub-continent. The eccentric
the Times Magazine considered Nizam as the wealthiest man in the world
in 1937. He was an efficient ruler who maintained law and order, a
separate judiciary, promoted both Hindu and Islamic cultures, and set up
the India’s first modern university that taught in an Indian language.
India gained independence in 1947, which brought the partition of the
country along with it. The fate of Hyderabad again hung in a delicate
balance with the Nizam refusing to accede to either India or Pakistan.
As the State was surrounded by India on all sides, he signed a
Standstill Agreement to enable free passage of supplies and trade.
However, violence erupted and India initiated a police action that led
to wresting controls from the Nizam on September 17, 1948. The State of
Hyderabad, was formed when Nizam signed an Instrument of Accession.
The States of the Indian Union were reorganized in 1956 on the basis
of language and Hyderabad and the surrounding areas were added to form
Andhra Pradesh with the rest of the Hyderabad State going to Bombay (now
Maharashtra) and Karnataka.

separate judiciary, promoted both Hindu and Islamic cultures, and set up
the India’s first modern university that taught in an Indian language.
India gained independence in 1947, which brought the partition of the
country along with it. The fate of Hyderabad again hung in a delicate
balance with the Nizam refusing to accede to either India or Pakistan.
As the State was surrounded by India on all sides, he signed a
Standstill Agreement to enable free passage of supplies and trade.
However, violence erupted and India initiated a police action that led
to wresting controls from the Nizam on September 17, 1948. The State of
Hyderabad, was formed when Nizam signed an Instrument of Accession.
The States of the Indian Union were reorganized in 1956 on the basis
of language and Hyderabad and the surrounding areas were added to form
Andhra Pradesh with the rest of the Hyderabad State going to Bombay (now
Maharashtra) and Karnataka.

Developments under his rule:
One
of Nizam's first assignments after he ascended to throne was to take
Mokshagundam Visweswaraiah's advice on how to control the floods and use
the excess floodwater. He undertook work of embankment of the Musi
River and constructed Osman Sagar and Himayat Sagar Dams at Gandipet on
Visweswaraiah's advice. It was because of his foresight and commitment
to the welfare of his people, old city suffered minimum damage in the
recent floods. He also undertook some irrigation projects on the
Tungabhadra River.
It is said that upto 11 percent of the Nizam's
budget was spent on education. He set up many schools, colleges,
universities including Osmania University and even a 'Department for
Translation'. He made primary education compulsory and provided free of
cost education to the weaker sections of the society. He made immense
donations to many institutions such as the Jamia Nizamia, the Darul
Uloom Deoband, the Banaras Hindu University and even to some
universities abroad.
The Nizam was responsible for starting
earliest public sector undertakings such as Nizam Sugar Factory and
Singareni Collieries. He set up the 'City Improvement Board' and
replaced slums with planned colonies.
Mir Osman Ali Khan started
his own bank called the 'Hyderabad State Bank', which is now referred as
State Bank of Hyderabad. Hyderabad was the only state which had its own
currency, the Hyderabadi rupee, in British India.
During his
reign, many major buildings like Osmania General Hospital, Andhra
Pradesh High Court, Asafiya Library (State Central Library), Town Hall
(Assembly Hall), Jubilee Hall, Hyderabad Museum (State Museum), and the
magnificent Hyderabad House at New Delhi were built.
Mir Osman Ali
Khan was one of the great rulers of Hyderabad, who initiated many
development programs in Hyderabad. Developments under his rule speak out
his passion to serve the people. Despite of his major contribution to
the developments in Hyderabad, he is often criticized for his only
ambitious desire of becoming independent with the help of Razakars. Mir
Osman Ali Khan died on 24th February, 1967.

S. Ravi Sundar, the Senior Restaurant Manager at The Residency tells us the story as we savour the famous Paaya at the Nizam’s Kitchen, the Hyderabadi food festival organised by the hotel. The thick broth smells heavenly with the aroma of the Hyderbadi Potli masala and sandalwood powder wafting around.
The festival also has Haleem, a semi-gravy dish made of thin shreds of meat, wheat, lentils and spices.
Chef Mohammed Zashimuddin explains how the Haleem is stirred and mixed all day long to get just the right texture. The spicy paaya and haleem are served with Sheermal, a type of bread sprinkled with sesame seeds. The raisin tucked into the dough gives you a pleasant surprise as you munch on a piece dipped in paaya.

Hyderabad, May 27: Pigeon racing, once a passion with the high-flying Nizams of Hyderabad, seems to have taken wing again.
The birds were once used as messengers by the British — old-timers say even in World War II — but were almost forgotten until the contests revived interest in them.
The pigeon races now vie for a pride of place alongside Irani chai, Handi biryani, drum-beating — other traditions associated with the Nizams that live to this day.
The Homer, Tumbler and Tugudi races are some of the pigeon contests. These are held mostly in the Old City, which used to be home to the Nizams, for four months from early spring to summer.
The Homer race is a competition in which the birds are left far away and have to return to base. The tumbler competition tests the endurance of the birds by getting them to fly long distances. Tugudi involves teams of pigeons and is like a relay race.
At the forefront of the efforts to revive the tradition is the Hyderabad Homer Pigeon Club, formed by a group of residents from the city’s Santosh Nagar area.
“Our membership is growing by the day with sports lovers who are fascinated by the pigeons’ ability to return home from faraway places, sometimes even after a year,” said Hanifuddin, a young techie who is one of the members.
Homers are a breed of pigeons fit for racing when they are between eight months and five years old.
The rules of the game have not changed since the days of the Nizams. The birds are taken to points around 500km away but which are generally equidistant from the homes of the owners, called “fanciers”.
A chit with a secret code is tied to the claws of each bird. Once they are released into the air, the fanciers have to call the organisers and report the code. The bird that gets home first is declared the winner.
“The condition for membership of our club is that they must be genuine pigeon lovers,” says Abdul Samad, the vice-president.
Asked whether the race meant being cruel to the birds, Shaker Numan, the club’s president, said they were “cared for like children”.
“There is no betting, nor are any awards given. The sport is practised only as a pastime among bird lovers, just like dog and horse-racing, or even rat racing in China,” Numan, a doctor, said.
Some patrons like Hanifuddin couldn’t resist talking about “the feathers in their cap”. “Four of my birds topped the contests, flying home from 450km away,” said the IT executive who monitored his pigeons by planting miniature trackers in their bodies.
But the sport is not limited to Hyderabad, with groups training pigeons for racing in other cities such as Bangalore, Chennai and Calcutta. “I have participated in such a race in Bangalore,” said businessman and club member Arif.
If Arif has raced his pigeons, Samad has been involved in grooming Homers for the past 15 years. He has 30 pigeons at his home in the Old City. His Homers include breeds such as Blue Checker, Blue Bar, Black Checker, Red Bar and others. “I inherited the passion for birds from my uncle, who was a Nawab,” he said.
